I’m sure by now everyone has heard of the Acai Berry. I’m going to confess, until our recent trip to Hawaii, I’d never had the Acai Bowl that many health enthusiasts can’t get enough of! It’s also a local favorite on the Island. I’m not sure what rock I’ve been under because these scrumptious bowls are not be missed! We had them almost every day and enjoyed testing them out at different locations. I’m still dreaming about them! Yum-O!
I started asking people questions about their recipes and when we came home, I was determined to create my own version that reminded us of the amazing bowls we had. I had one hurdle though, it had to be quick and easy for our busy lifestyle. I decided to use the frozen puree by Sambazon (mainly because they had it at my local Safeway grocery store). I then mixed it with a fabulous fruit medley (blueberries, strawberries, and banana) that had everything I wanted to include, all in one bag! Finally, add a touch of Coconut Milk to your Ninja Blender. I prefer mine less sweet so I can add toppings like coconut or chocolate chips if desired. You can also add a touch more banana or honey if you want more natural sweetness to the main recipe. That’s the fun part, there isn’t a wrong way to make it! You can customize away once you have a basic recipe that you like.
RECIPE:
Serves 2
2 packet of pure acai berry
2 cups of freshly frozen fruit medley (bananas, strawberries, blueberries)
1/2 cup coconut milk
Add all ingredients and blend until smooth. You want the consistency to be thicker than a smoothy. Scoop out and serve with your favorite toppings (i.e granola, fruit, honey, coconut).
The next time I made it I added some spinach… the kids didn’t even notice the difference (Yass!). I top mine with some yummy granola and chopped up a banana to go alongside. I hope this inspires you to try something new and remember healthy choices don’t have to be challenging! I also discovered that you can make a bunch and freeze it. It can be scooped out like ice cream once thawed a touch. Another great way to save time!
